Greetings, my name is Enrique F. "Kiko" Cerda and I worked with my father in the founding of Kiko Foods. I was born in Leon, Nicaragua in 1958. Since 11 years of age I remember spending the summer working with my dad in our home lab or accompanying him on plant visits or consulting meetings. These consulting visits took us to the agricultural experiment station in Managua; Quaker Oats' cereal plant, Pepsi's bottling facility; a hot sauce plant; a sugar and alcohol plant; a local cereal plant; a cotton facility; an insecticide plant; and many, many others. We used to work mainly with fruits: drinks, flavors, marmalades, preserves, vinegar, gelatin, and more.

Since an early age I have been involved, through my father, with food. Once in the US I was able to finish my education and earned a Bachelor of Science degree in Animal Husbandry and Chemistry at the University of West Virginia.

I remember my Dad telling me that some of the reasons why the US was so wealthy was their diversity in uses of agricultural products, their research for high yields, and the openness of their people to new products. It is almost unbelievable how one little grain can be transformed into so many ingredients. Sometimes I wonder if technology will ever be able to keep up with the need or expectations for new consumer experiences when it comes to food (flavors, aromas, looks, feels, low sodium, low calories, low sugars, etc.). There is a huge market out there with a lot of expectations. We, at Kiko Foods, Inc.® are doing all we can to fill those needs using the skills and tools at our disposal.
